To me, nothing says the Holidays like Gingerbread! Every year my Mom would bake up some gingerbread loaves and the house would fill with that familiar scent of ginger and nutmeg.
When I became #glutenfee & #dairyfree I gave up a lot of my favourites. Mostly because at the time there were not the amazing different options there are now on the market for substitutes.
Well, fast forward many years and we have many different options to recreate the treats and meals that we have been missing!
As I was baking these mini loaves, and the scent of ginger and nutmeg began to fill my kitchen, I was instantly transported back to the years Mom would bake them <3
Thanks Mom, for always whipping up a batch of these for me to take home with me and enjoy all throughout the Holiday season! (although, full disclosure, they never lasted long LOL)
After the recipe you will find a list of the ingredients that I used and links of where to purchase. I use well.ca as it has been my go-to from the very beginning of my lifestyle journey and continues to provide the best pricing and options. Grocery stores carry some if not most of these now as well.
Ps: This recipe is super simple to make! Sure there seems to be a lot of ingredients, and you might make a mess, but isn't that the beauty of baking?!
Even this non-baker whipped these up in no time and they turned out perfect!
Hehe. Check out my almost complete kitchen and my make-shift "handles"! Green painters tape for the win!
Without further ado....I give you: Gingerbread Loaf! Remember to Pin for later!

Bob's Red Mill Gluten Free 1:1 Ratio Baking Mix (I like this one because there is no math or guess work! It's 1:1)
